- 2 cups warm water (105°F – 115°F)
- 1 tablespoon granulated sugar
- 1/2 cup plus 2 tablespoons extra virgin olive oil
- 4 teaspoons fine sea salt
- 7 ounces Gruyère cheese (cubed)
- 2 tablespoons fresh thyme leaves
- 2 teaspoons Maldon sea salt flakes
Instructions
- In a mixing bowl, combine warm water, sugar, and yeast; let sit for 5-10 minutes until frothy.
- Add flour, fine sea salt, and olive oil; stir to combine.
- Knead the dough on a floured surface for about 10 minutes until smooth.
- Place in a greased bowl, cover with plastic wrap, and let rise for 2 hours or until doubled.
- Grease a baking sheet with olive oil; punch down the dough and transfer it to the sheet.
- Stretch into an even rectangle; poke dimples in the surface.
- Top with Gruyère cubes, thyme leaves, and Maldon salt flakes before covering and letting rise for another hour.
