Ingredients

Scale
  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 bell peppers (red, yellow, or green), sliced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp chili powder (optional)
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ cup low-sodium chicken broth
  • 1 tbsp tomato paste
  • 1 tbsp soy sauce or coconut aminos
  • Juice of ½ lime (optional)
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Cook diced onions until soft, about 3 minutes.
  2. Stir in minced garlic and cook for an additional 30 seconds.
  3. Add ground turkey to the skillet and break it up using a wooden spoon. Cook until no longer pink, about 5–6 minutes.
  4. Sprinkle in smoked paprika, cumin, chili powder (if using), salt, and black pepper. Stir well to coat the turkey.
  5. Add sliced bell peppers and cook for another 3–4 minutes until tender-crisp.
  6. Pour in chicken broth, tomato paste, and soy sauce; stir to combine. Let simmer for 2–3 minutes.
  7. Finish with lime juice before serving hot garnished with fresh herbs.
