  • 1/2 tsp black pepper
  • 1 can (28 oz) diced tomatoes (drained)
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Slice zucchini into rounds, salt them, let sit for 15 minutes to draw moisture, rinse, and pat dry.
  3. In a large skillet, heat olive oil over medium-high heat; sauté onions for 2 minutes, add garlic and ground beef until browned.
  4. Mix in drained tomatoes, Italian seasoning, salt, and pepper; remove from heat.
  5. In an 8×8 baking dish, layer half of the meat mixture, followed by zucchini slices and half of the cheese. Repeat the layers.
