  • 2 cloves garlic (minced)
  • 3 carrots (sliced)
  • 2 stalks celery (sliced)
  • 2 medium potatoes (diced)
  • 4 cups beef broth
  • 1 can diced tomatoes (15 oz.)
  • 1 can condensed tomato soup (10.5 oz.)
  • 3 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Add ground beef, onion, and garlic; cook until the beef is browned.
  2. Stir in carrots and celery; sauté for about 6–8 minutes until softened.
  3. Add Italian seasoning and bay leaf; cook for another minute.
  4. Mix in potatoes, then pour in beef broth along with diced tomatoes, tomato soup, tomato paste, and Worcestershire sauce.
  5. Finally, add green beans and corn; bring to a boil. Reduce heat, cover, and simmer for 35–40 minutes until veggies are tender.
