Ingredients

Scale
  • 1 lb ground beef (85/15 or 90/10 lean)
  • 2 tbsp taco seasoning
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 can black beans (rinsed and drained)
  • 1 cup sweet corn
  • 2 medium tomatoes (diced)
  • 2 cups iceberg lettuce (shredded)
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro (chopped)

Instructions

  1. Cook the rice: Boil 2 cups of water in a pot. Add the rinsed rice, reduce heat, cover, and simmer for about 18-20 minutes until water is absorbed.
  2. Brown the beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks.
  3. Season the beef: Drain excess fat if needed and stir in the taco seasoning. Cook for an additional 2-3 minutes.
  4. Assemble bowls: Start with a scoop of rice in each bowl, then top with seasoned beef, black beans, corn, tomatoes, lettuce, sour cream, and cilantro.
