Ingredients
- 1 pound ground beef
- 1 cup long grain rice (dry)
- ½ medium onion (diced)
- 2 teaspoons garlic (minced)
- 1 medium red bell pepper (chopped)
- 1 cup frozen corn
- 15 ounces canned black beans (drained)
- 14.5 ounces canned diced tomatoes (with juice)
- 1 tablespoon tomato paste
- 2 tablespoons taco seasoning
- 2 cups low-sodium chicken broth

Instructions
- Sauté diced onion and minced garlic in olive oil over medium heat until browned.
- Add ground beef and cook until browned; drain excess grease.
