  • 2 salmon fillets (150-180g each)
  • 1 tbsp olive oil
  • 300 g baby potatoes, halved
  • 200 g green asparagus, trimmed
  • 60 g shredded mozzarella or cheddar cheese
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 200°C (or 180°C for fan ovens).
  2. Toss halved baby potatoes with olive oil, thyme, salt, and pepper; spread on a baking tray and roast for 25-30 minutes.
  3. Season salmon fillets with olive oil, garlic powder, paprika, salt, and pepper.
  4. Toss asparagus with olive oil, salt, and pepper; roast alongside potatoes for 10 minutes then sprinkle cheese on top and roast for an additional 5-7 minutes.
  5. Grill salmon fillets over medium heat for 4-5 minutes per side until cooked through.
  6. Serve salmon alongside cheesy asparagus and herb-roasted potatoes garnished with fresh parsley.
