  • 1 large piece of flank steak (3 pounds)
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp soy sauce
  • 1/2 tsp ground chipotle chile powder
  • 2 tsp lime zest (optional)

Instructions

  1. In a mixing bowl, combine lime juice, olive oil, cumin, oregano, onion powder, garlic powder, soy sauce, chipotle powder, and lime zest.
  2. Place the flank steak in a Ziploc bag and pour the marinade over it. Seal tightly and refrigerate for at least 8 hours or up to 24 hours.
  3. Preheat your grill to medium-high heat. Oil the grill grates to prevent sticking.
  4. Remove the steak from the refrigerator and let it come to room temperature for about 30 minutes before grilling.
  5. Grill the steak for approximately 4-5 minutes per side for medium rare or about 6 minutes per side for medium doneness.
  6. Use an instant-read thermometer to check for doneness (140-145°F for medium rare; 155-160°F for medium).
  7. Let the steak rest for about 5 minutes before slicing thinly against the grain.
