Ingredients
- 2 pounds fresh green beans
- 14 oz grape or cherry tomatoes
- 1/2 cup feta cheese (cubed)
- 1/4 cup fresh basil leaves (chopped)
- 1/4 cup fresh Italian parsley leaves (chopped)
- 1/3 cup lemon juice
- 2 cloves garlic (minced)
- 1/3 cup extra virgin olive oil
- 1 tsp dried oregano
- 1/8 tsp salt and pepper to taste
Instructions
- Bring a large pot of water to a boil and parboil the green beans for 3 minutes. Transfer them to an ice bath immediately.
- In a small bowl, whisk together lemon juice, minced garlic, olive oil, oregano, salt, and pepper for the dressing.
- In a large serving bowl, combine halved tomatoes, chopped basil, parsley, and cooled green beans.
- Pour the dressing over the salad and gently toss in cubed feta cheese until well mixed.
