Ingredients
- 1.2 liters chicken broth
- 30g unsalted butter or olive oil
- 40g finely chopped shallots
- 2 tsp minced garlic
- 200g Arborio rice
- Kosher salt to taste
- 120ml dry white wine
- 450g large raw shrimp, peeled & deveined
- 100g finely grated Parmesan cheese (plus extra for topping)
- Black pepper to taste
- Chopped parsley or chives for garnish
Instructions
- Warm the chicken broth in a pot over low heat.
- In a wide pan, melt butter or heat olive oil over medium heat. Cook shallots until softened, then add garlic and cook until fragrant.
- Stir in Arborio rice and toast for 2-3 minutes until slightly translucent.
- Pour in white wine to deglaze the pan and let it reduce completely.
- Gradually add warm broth (½ cup at a time), stirring constantly until absorbed before adding more; this should take about 25–35 minutes until creamy yet al dente.
- Cook shrimp in another pan with some oil until pink and opaque, about 2 minutes per side.
- Stir melted Parmesan into the risotto and let rest for 5 minutes off heat before serving topped with shrimp and garnished with parsley or chives.
