  • 30g unsalted butter or olive oil
  • 40g finely chopped shallots
  • 2 tsp minced garlic
  • 200g Arborio rice
  • Kosher salt to taste
  • 120ml dry white wine
  • 450g large raw shrimp, peeled & deveined
  • 100g finely grated Parmesan cheese (plus extra for topping)
  • Black pepper to taste
  • Chopped parsley or chives for garnish

Instructions

  1. Warm the chicken broth in a pot over low heat.
  2. In a wide pan, melt butter or heat olive oil over medium heat. Cook shallots until softened, then add garlic and cook until fragrant.
  3. Stir in Arborio rice and toast for 2-3 minutes until slightly translucent.
  4. Pour in white wine to deglaze the pan and let it reduce completely.
  5. Gradually add warm broth (½ cup at a time), stirring constantly until absorbed before adding more; this should take about 25–35 minutes until creamy yet al dente.
  6. Cook shrimp in another pan with some oil until pink and opaque, about 2 minutes per side.
  7. Stir melted Parmesan into the risotto and let rest for 5 minutes off heat before serving topped with shrimp and garnished with parsley or chives.
