  • 2 pounds ground beef (or turkey/lamb)
  • 4 celery stalks (diced)
  • 2 carrots (diced)
  • 4 tablespoons tomato paste
  • 1½ cups beef broth
  • 1 teaspoon salt
  • 2 teaspoons pepper
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 4 large sweet potatoes or Yukon gold potatoes (peeled and cut)
  • 1 egg
  • ¼ cup dairy-free milk
  • 2 tablespoons dairy-free butter
  • 1 teaspoon rosemary
  • ¼ teaspoon cayenne
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Preheat oven to 350°F.
  2. Boil peeled and cut potatoes until tender (10-15 minutes). Drain well.
  3. In a large skillet, heat oil; sauté onion and garlic until translucent. Add ground beef; cook until browned.
  4. Stir in remaining meat mixture ingredients; simmer for 25-30 minutes.
  5. Transfer meat mixture to a baking pan; spread evenly.
  6. In a bowl, mash drained potatoes with egg, dairy-free milk, and seasonings until fluffy.
  7. Spread mashed potatoes over meat mixture evenly.
  8. Bake uncovered for about 20 minutes until hot and bubbly.
