  • 1 lb boneless skinless chicken thighs, cut into strips
  • 3 tablespoons minced fresh ginger
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • Coconut or olive oil for cooking

Instructions

  1. In a bowl, whisk together oyster sauce, soy sauce, rice vinegar, sesame oil, and cornstarch. Set aside.
  2. Heat oil in a large skillet or wok over high heat. Add chicken strips and cook for about 6-8 minutes until fully cooked. Remove and set aside.
  3. In the same skillet, add ginger, garlic, broccoli (and mushrooms if desired). Stir-fry until fragrant and broccoli is bright green (about 2-3 minutes).
  4. Deglaze the pan with water, then add the sauce mixture. Cook while stirring until it thickens slightly (about 1 minute).
  5. Return chicken to the skillet and stir well to coat everything with sauce.
