  • 3/4 cup granulated sugar
  • 12 Tbsp unsalted butter
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 (8 oz) package cream cheese
  • 6 Tbsp granulated sugar
  • 1/2 tsp vanilla extract
  • 5 cups assorted fresh fruit
  • 1/4 cup apricot preserves
  • 1 Tbsp water

Instructions

  1. Preheat the oven to 350°F (175°C). Butter a rimmed pizza pan and line it with parchment paper.
  2. In a mixing bowl, whisk flour, baking powder, baking soda, and salt. In another bowl, cream together sugar and butter until light. Mix in egg and vanilla.
  3. Gradually add the dry ingredients to the wet mixture until just combined. Spread the dough onto the prepared pan.
  4. Bake for 11-13 minutes until just set. Allow to cool completely on a wire rack.
  5. For the frosting, beat together cream cheese, sugar, and vanilla until fluffy.
  6. Spread the frosting over the cooled crust and arrange fresh fruit on top.
  7. Mix apricot preserves with water and brush over the fruit for shine.
