- 8 ounces linguine pasta
- 1 tablespoon olive oil
- 3 tablespoons butter
- 5–6 cloves minced garlic
- 12 ounces halved cherry tomatoes
- 1/4 teaspoon Italian seasoning
- 2 cups fresh baby spinach
- 1/2 cup freshly grated parmesan cheese
- Salt and pepper to taste
Instructions
- Boil a salted pot of water over high heat. Cook the linguine according to package directions until al dente.
- In a skillet, heat olive oil and butter over medium-high heat. Add minced garlic, halved tomatoes, and Italian seasoning. Cook for 4-5 minutes until tomatoes are soft.
- Stir in fresh spinach and cook for an additional 1-2 minutes until wilted.
- Reserve 1/4 cup of pasta water before draining the linguine. Combine drained pasta with the sauce in the skillet, adding reserved pasta water and parmesan cheese. Toss well until creamy; season with salt and pepper.
