  • 8 ounces linguine pasta
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 56 cloves minced garlic
  • 12 ounces halved cherry tomatoes
  • 1/4 teaspoon Italian seasoning
  • 2 cups fresh baby spinach
  • 1/2 cup freshly grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Boil a salted pot of water over high heat. Cook the linguine according to package directions until al dente.
  2. In a skillet, heat olive oil and butter over medium-high heat. Add minced garlic, halved tomatoes, and Italian seasoning. Cook for 4-5 minutes until tomatoes are soft.
  3. Stir in fresh spinach and cook for an additional 1-2 minutes until wilted.
  4. Reserve 1/4 cup of pasta water before draining the linguine. Combine drained pasta with the sauce in the skillet, adding reserved pasta water and parmesan cheese. Toss well until creamy; season with salt and pepper.
