  • 5 large peaches (peeled and diced)
  • 1 teaspoon fresh lemon juice
  • 1 large egg (lightly beaten)
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup powdered sugar
  • ¼ teaspoon almond extract
  • 1 tablespoon milk (more or less for desired consistency)

Instructions

  1. Preheat your oven to 350°F for glass pans or 375°F for light metal pans. Grease a 13×9-inch baking pan.
  2. In a mixing bowl, combine sugar, flour, baking powder, salt, and cinnamon. Cut in cold butter until crumbly; reserve 1 cup of this mixture.
  3. Mix in the beaten egg into the remaining mixture until combined. Press evenly into the prepared pan.
  4. In another bowl, mix diced peaches with lemon juice and sugar. Spread over the base layer.
  5. Sprinkle reserved crumbs on top and bake for about 45 minutes or until golden brown.
  6. For glaze: Whisk powdered sugar with almond extract and milk until smooth. Adjust milk for desired consistency.
  7. Drizzle glaze over cooled bars before cutting into squares.
