  • 6 cups beef broth

  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves

  • 6 slices toasted baguette
  • 1 ½ cups shredded Gruyère or Swiss cheese

Instructions

  1. Gather all ingredients and slice onions thinly.
  2. In a heavy-bottomed pot, heat olive oil over medium-high heat. Sear beef short ribs on all sides until browned (about 5 minutes per side). Remove and set aside.
  3. Add butter to the same pot; once melted, add sliced onions and cook slowly over medium heat for about 30 minutes until golden brown.
  4. Stir in minced garlic; return seared ribs along with beef broth, Worcestershire sauce, bay leaf, thyme, salt, and pepper. Bring to a gentle boil.
  5. Reduce heat to low; cover and simmer for about 3 hours until short ribs are tender.
  6. Remove ribs, shred meat from bones, and return shredded meat to the pot.
  7. Toast baguette slices; top with cheese and broil until bubbly. Serve soup topped with cheesy toast.
