- 1¾ cups lukewarm water
- 2 teaspoons instant dry yeast
- 2 teaspoons sugar
- 4 cups all-purpose flour
- 3 teaspoons salt
- 4 tablespoons extra virgin olive oil (divided)

- Bloom the yeast by mixing lukewarm water, yeast, and sugar in a small bowl. Let sit for 30 seconds until frothy.
- In a large mixing bowl, combine flour and salt. Add the yeast mixture and mix until you have a wet dough. Stir in 2 tablespoons of olive oil.
- Choose between quick proofing (1.5 to 2 hours at room temperature) or slow proofing (8 to 24 hours in the fridge).
- After proofing, fold the dough in the bowl about 20 to 40 times.
- Grease a baking pan with olive oil and spread the dough into it. Let it proof for an additional 45 minutes while preheating your oven to 450°F (230°C).
- Dimple the surface with your fingers dipped in a mixture of olive oil, water, and salt; add optional toppings.
- Bake for 20 to 25 minutes until golden brown. Cool before slicing.
