  • 4 large egg whites
  • 1 cup caster sugar
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 45 ripe figs, halved
  • Fresh raspberries (as desired)
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat the oven to 120°C (250°F) and line two baking sheets with parchment paper.
  2. In a stand mixer bowl, beat room temperature egg whites until soft peaks form. Gradually add caster sugar while continuing to beat until stiff peaks form. Gently fold in vinegar, cornstarch, and vanilla extract.
  3. Divide the meringue mixture onto the prepared baking sheets into circular shapes about 8 inches in diameter. Create slight dips in the center.
  4. Bake for 1 hour or until dry and crisp but not browned. Leave in the oven to cool completely.
  5. Whip heavy cream until soft peaks form. Layer meringues on a serving plate, topping each layer with whipped cream, half of the honeyed figs, and some raspberries.
  6. Garnish with fresh mint leaves and serve immediately or refrigerate until ready.
