- 2 tsp garlic
- ¼ cup tomato paste
- 3 tomatoes
- 1 onion
- ½ cup plain yogurt
- Vegetable oil

Instructions
- Preheat the oven or air fryer to 200°C (400°F). Slice eggplants lengthwise and brush them with vegetable oil. Roast for 25–30 minutes until golden.
