Ingredients
- 4 large bell peppers
- 1 lb lean ground turkey
- 1 medium onion, chopped
- 1 cup corn (Mexicorn or roasted)
- 1 cup canned black beans, drained
- 2 cups tomato salsa
- 1 cup cooked brown rice
- 1 cup shredded cheese (Mexican blend or sharp cheddar)

Instructions
- Preheat oven to 350°F. Spray a baking dish with olive oil. Halve the bell peppers lengthwise, remove seeds and ribs, and place cut-side up in the dish. Season with oil, salt, and pepper. Bake for 15 minutes.
- In a skillet over medium heat, cook ground turkey until browned. Add onions and garlic; cook until softened. Stir in taco seasoning, corn, black beans, salsa, and brown rice; simmer for 2 minutes.
- Fill each pepper with the turkey mixture and top with cheese. Bake for an additional 15 minutes until cheese is melted.
