Ingredients

  • 3 tbsp olive oil
  • 8 chicken sausage links (cut into rings about 1/8 inch thick)
  • 1/2 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 15 oz can of tomato sauce
  • 2 14.5 oz cans of Fire Roasted tomatoes
  • 1 48 oz chicken broth + 1 8 oz chicken broth
  • 1 15 oz White Cannellini beans (drained & rinsed)
  • 2 8 oz packages of tortellini (we like the cheese ones or spinach)
  • 1 cup spinach
  • 1 1/2 tsp basil
  • 1/2 cup Half & Half

Instructions

  1. Sauté diced onion and minced garlic in olive oil until fragrant. Add sliced chicken sausage and cook until browned.
  2. Stir in tomato sauce, fire-roasted tomatoes, chicken broth, spices, and let simmer for at least an hour.
  3. Add tortellini to the pot and cook until tender. Stir in Half & Half, spinach, and beans.
  4. Thicken the soup with arrowroot powder mixed with warm water.
  5. Serve garnished with fresh basil and grated Parmesan cheese if desired.
