Ingredients
- 1 cup fine bulgur
- 2 cups boiling water
- 3 cups curly parsley, minced
- 3/4 cup green onion, chopped
- 1/4 cup fresh mint, minced
- 1 1/2 cups Roma tomatoes, diced
- 1/2 cup extra virgin olive oil
- 1/2 cup lemon juice (freshly squeezed)
- 1 1/2 teaspoons kosher salt
Instructions
- Soak bulgur in boiling water for at least 30 minutes until tender.
- Mince parsley, chop green onions, and mince mint; combine in a bowl.
- Prepare vinaigrette by whisking olive oil, lemon juice, and salt in a small bowl.
- Drain excess water from bulgur using a colander lined with cloth.
