- 1 jalapeño, seeded and finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup crumbled cotija cheese
- 3 tablespoons fresh cilantro, chopped
- 3 tablespoons Greek yogurt
- Juice of 1 lime
- Kosher salt and black pepper to taste
Instructions
- In a large sauté pan over medium-high heat, melt the butter. Add whole kernel corn and cook for about 10 minutes until golden and caramelized. Stir in minced garlic for an additional 2 minutes.
- Transfer cooked corn to a mixing bowl. Combine with jalapeño, red onion, cotija cheese, cilantro, Greek yogurt, lime juice, salt, and pepper. Mix well.
- Serve immediately with tortilla chips or refrigerate in an airtight container for up to five days.
