  • 4 medium potatoes
  • 500 g (1 lb) chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp dried oregano
  • 1 onion (finely chopped)
  • 3 garlic cloves (crushed)
  • 1 cup chicken stock
  • 1 cup cream
  • 3 tsp Dijon mustard
  • 12 tsp lemon juice

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. Peel and cube the potatoes, then toss them with olive oil, salt, and pepper on a large sheet pan.
  3. Roast the potatoes for about 30 minutes until golden brown, turning halfway through.
  4. Flatten the chicken breasts between parchment paper using a meat mallet and season with olive oil, salt, pepper, and oregano.
  5. Sear the chicken in a deep pan over medium-high heat for about 2-3 minutes per side until golden brown. Remove from the pan.
  6. In the same pan, sauté onion and garlic until fragrant. Add chicken stock to simmer briefly before stirring in cream and Dijon mustard until thickened.
  7. Mix in lemon juice, season to taste, then return the chicken to the sauce for an additional 5 minutes of cooking.
