  • 1 cup corn kernels (frozen)
  • 1 14 ounce can low sodium black beans (drained and rinsed)
  • 5 cups shredded chicken
  • 3 cups reduced sodium chicken broth
  • 1 4 ounce can mild green chiles
  • 1 tablespoon olive oil
  • 2 tablespoons tomato paste
  • 1 1/4 cups shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 400°F.
  2. In a large baking dish, mix onion, bell pepper, rice, fajita seasoning, and cayenne pepper.
  3. In a bowl, whisk together chicken broth, green chiles, tomato paste, and olive oil; then pour over the rice mixture.
  4. Stir in shredded chicken, black beans, and corn until combined.
  5. Cover with aluminum foil and bake for 65-70 minutes until rice is cooked and liquid is absorbed.
  6. Remove foil, sprinkle cheese on top, and bake for an additional 5-10 minutes until cheese melts.
