  • 2 tbsp. butter
  • 3 tbsp. all-purpose flour
  • 2 cups milk
  • 2 tsp. honey Dijon mustard
  • 1/4 tsp. salt
  • 1/2 tsp. pepper
  • 1 and 1/2 cups shredded Old Cheddar cheese

Instructions

  1. Prepare the Brussels sprouts by trimming the ends and removing loose leaves.
  2. Boil salted water in a large saucepan, add the Brussels sprouts, and cook for 10–12 minutes until tender. Drain well.
  3. In a medium saucepan, melt butter over medium heat; whisk in flour for about 1.5 minutes.
  4. Gradually add milk while whisking constantly; cook until thickened (about 5 minutes). Mix in honey Dijon mustard, salt, and pepper.
  5. Stir in half a cup of shredded cheese until melted, then gently combine with the cooked Brussels sprouts.
  6. Transfer to a greased baking dish, top with remaining cheese, and bake at 375°F for about 25 minutes until bubbly and golden.
