  • 2 tbsp olive oil
  • 4 garlic cloves, finely chopped
  • 200 ml (¾ cup) tomato passata
  • 200 ml (¾ cup) heavy cream
  • Salt, to taste
  • Pepper, to taste
  • Optional: Fresh basil leaves
  • Optional: Grated parmesan or pecorino cheese

Instructions

  1. Bring a large pot of salted water to boil. Cook the pasta according to package instructions until al dente. Reserve a cup of pasta water before draining.
  2. In a skillet over medium heat, warm the olive oil and sauté the garlic for 1-2 minutes until fragrant but not browned.
  3. Add tomato passata to the skillet and simmer for about 5-7 minutes, seasoning with salt and pepper.
  4. Lower the heat and stir in the heavy cream, allowing it to thicken slightly for 3-4 minutes. Adjust consistency with reserved pasta water if needed.
  5. Toss the cooked pasta into the sauce until well-coated. Serve hot with optional garnishes.
