  • 1/2 cup buttermilk
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ tsp almond extract
  • 3/4 cup granulated sugar
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • 1/4 tsp salt
  • 1 ½ cups fresh cherries (pitted and quartered)
  • 1/2 cup sliced almonds

Instructions

  1. Preheat oven to 350°F (177°C). Line an 8½-inch loaf pan with parchment paper and spray with nonstick baking spray.
  2. In a bowl, whisk together eggs, Greek yogurt, buttermilk, melted butter, vanilla extract, almond extract, and sugar until combined.
  3. In another bowl, mix flour, baking powder, and salt. Sift dry ingredients into the wet mixture and blend until just combined.
  4. Toss cherries in cornstarch to coat lightly before folding them into the batter along with sliced almonds.
  5. Pour batter into the prepared pan and sprinkle reserved cherries and almonds on top.
  6. Bake for approximately 50-60 minutes or until a toothpick comes out clean.
  7. Cool completely on a wire rack before slicing.
