Ingredients

Scale
  • 1 cup unsalted butter
  • 1 1/4 cups granulated sugar
  • 3/4 cup packed dark brown sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup molasses
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup chopped crystallized ginger

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish and line it with parchment paper.
  2. In a medium saucepan, melt the butter over medium heat. Once melted, stir in both the granulated sugar and dark brown sugar until smooth.
  3. Add the eggs one at a time to the butter-sugar mixture. Beat well after each addition. Stir in the vanilla extract until fully combined.
  4. In a separate bowl, sift together all-purpose flour, cocoa powder, ground ginger, cinnamon, cloves, nutmeg, salt, and baking powder.
  5. Gradually add the dry mixture to the wet mixture. Stir gently until just combined; avoid over-mixing.
  6. Carefully fold in molasses, semisweet chocolate chips, and chopped crystallized ginger until evenly distributed throughout the batter.
  7. Pour the batter into your prepared baking dish and spread it evenly. Bake for about 30-35 minutes or until a toothpick comes out with only a few moist crumbs attached.
  8. Allow the brownies to cool completely in the pan on a wire rack. Lift them out using the parchment paper overhang before cutting into squares.
