- 21 g Dutch process cocoa powder
- 1 tsp espresso powder
- 1/2 tsp salt
- 113 g whole milk
- 200 g granulated sugar
- 106 g dark brown sugar
- 25 g cornmeal
- 4 eggs (room temp)
- 1 tsp vanilla extract
Instructions
- Prepare the pie crust by mixing flour and kosher salt in a food processor. Add cold butter until crumbly, then incorporate ice water until dough forms. Chill for 30 minutes.
- Preheat the oven to 350°F (175°C).
- For the filling, melt butter and bittersweet chocolate in a saucepan over low heat. In a bowl, whisk cocoa powder, espresso powder, sugars, eggs, milk, and vanilla until combined. Mix in the melted chocolate mixture.
