  • 3 cloves garlic (crushed)
  • 1 medium onion (chopped)
  • 1 medium carrot (chopped)
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup red cooking wine (optional)
  • 1 dried bay leaf
  • 1 teaspoon dried parsley (or 3 tablespoons fresh, chopped)
  • 1 teaspoon dried basil (or 1 tablespoon fresh, chopped)
  • 1/2 teaspoon dried oregano (or 1 teaspoon fresh, chopped)
  • 1/4 teaspoon dried thyme (or 1 teaspoon fresh, chopped)
  • 1/4 teaspoon dried rosemary (or 1 teaspoon fresh, chopped)
  • 1 pinch red pepper flakes
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • Honey (to sweeten if needed)

Instructions

  1. 1. Wash and chop the tomatoes into halves or quarters.
  2. 2. In the crockpot, combine chopped tomatoes with crushed garlic, onion, carrot, and herbs.
  3. 3. Drizzle in olive oil and optionally add red wine. Cover and cook on low for 2-4 hours.
  4. 4. Once softened, allow the sauce to cool before straining through a food mill to remove skins and seeds.
  5. 5. Return the strained sauce to the crockpot; cook uncovered on low for an additional 4-6 hours until thickened.
  6. 6. Adjust seasoning as needed before serving.
