  • 2 medium zucchinis (about 400 g)
  • 150 g feta cheese (crumbled)
  • 1 egg
  • 50 g breadcrumbs
  • 2 tbsp oats (optional)
  • 2 tbsp freshly chopped parsley
  • 1 clove garlic (finely chopped)
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Wash and grate the zucchinis, then squeeze out excess moisture.
  3. In a mixing bowl, combine grated zucchini, feta cheese, egg, breadcrumbs, oats (if using), garlic, oregano, parsley, salt, and pepper. Mix until well combined.
  4. Shape the mixture into small balls (about golf ball size).
  5. Place on a lined baking sheet, drizzle with olive oil, and bake for approximately 20 minutes or until golden brown.
