  • 1.5 pounds baby gold potatoes
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/3 cup grated parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Boil the baby potatoes in salted water for 15–20 minutes until fork-tender. Drain and let dry.
  2. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Use a flat-bottomed glass or potato masher to smash each potato to about 1/2 inch thick on the baking sheet.
  4. In a small saucepan, melt the butter over low heat, then stir in minced garlic for 1–2 minutes until fragrant.
  5. Brush each smashed potato with garlic butter and drizzle lightly with olive oil. Season with salt, black pepper, and half of the parmesan cheese.
  6. Roast in the oven for 20–25 minutes or until golden brown and crispy, sprinkling remaining parmesan during the last 5 minutes of baking.
  7. Serve hot, garnished with chopped parsley.
