Ingredients
- 1.5 lbs boneless, skinless chicken thighs or breasts
- 1 cup carrots, sliced
- 1 cup mushrooms, sliced
- 2 cups fresh spinach leaves
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup sour cream or Greek yogurt
- 4 slices bacon, chopped
- Seasonings: Dijon mustard, Worcestershire sauce, smoked paprika, salt, black pepper
Instructions
- In a skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside.
- In the same skillet, sauté onion and garlic until softened. Add sliced carrots and mushrooms; cook until tender.
