  • 2 tablespoons unsalted butter
  • 2 cloves garlic (minced)
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F and grease a ceramic baking dish.
  2. Thinly slice the Yukon gold potatoes (about 1/16 inch).
  3. In a large pot over medium heat, melt butter and sauté garlic until fragrant. Stir in flour to form a roux and cook for about 2 minutes.
  4. Gradually add heavy cream while stirring until the sauce thickens (approximately 5 minutes). Mix in Parmesan, thyme, salt, and pepper.
  5. Combine potato slices with the sauce in a large bowl, coating evenly.

  7. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 30 minutes or until golden brown.
