Ingredients
- 16 fresh jalapeno peppers
- 1 white onion
- 8 garlic cloves
- 2 teaspoons kosher salt
- ½ cup avocado oil (or any neutral oil)
- 1 ½ tablespoons fresh lime juice
Instructions
- Fill a large stockpot halfway with water and add 1 teaspoon of salt; heat over high heat.
- Peel and quarter the onion; wash the jalapenos and add them both to a bowl.
- Break up the garlic cloves but keep them in their husks; add them to the bowl.
- Pour vegetables into the boiling water and simmer for about 20 minutes until soft.
- Drain and transfer the vegetables to a blender; add salt, oil, and lime juice.
- Blend for one minute until smooth; taste and adjust seasoning if necessary.
