  • 1 cup shredded pepper jack cheese

  3. In a small bowl, whisk together honey and Dijon mustard. Pour over chicken in the skillet; reduce heat and simmer for 2–3 minutes until sauce thickens slightly.
  4. Sprinkle pepper jack cheese over chicken; cover and cook for an additional 2–3 minutes until cheese melts.
  5. Fluff rice with a fork and serve topped with creamy chicken and sauce. Garnish with chopped parsley.
