  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes (with juice)
  • 1 can (15 ounces) whole kernel corn, drained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 cup diced potatoes
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • Sliced green onions
  • Extra shredded cheese
  • Crushed tortilla chips

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat if needed.
  2. Add onion and garlic; sauté until the onion is translucent.
  3. Stir in beef broth, diced tomatoes (with juice), corn, black beans, and potatoes. Mix well.
  4. Season with smoked paprika, chili powder, cumin, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for about 30 minutes until potatoes are tender.
  6. Stir in heavy cream and shredded cheddar cheese until melted and creamy.
  7. Serve hot topped with sliced green onions and crushed tortilla chips.
