  • 2 lb boneless beef shoulder or chuck (cut into 1 1/2-inch pieces)
  • Kosher salt and freshly ground black pepper
  • 1/4 cup olive oil (divided)
  • 4 medium onions (halved and thinly sliced)
  • 2 tbsp all-purpose flour
  • 1 cup red burgundy wine (such as pinot noir)
  • 6 medium carrots (peeled and cut into 1-inch pieces)
  • 1 clove garlic
  • Bouquet garni (thyme, bay leaf, parsley)
  • Water
  • Chopped fresh flat-leaf parsley (for garnish)

Instructions

  1. Pat the beef dry and season generously with salt and pepper.
  2. Heat half of the olive oil in a Dutch oven over high heat; sear the beef until browned on all sides. Remove from pot.
  3. Reduce heat, add onions to the pot; cook until softened and golden. Stir in flour until thickened.
  4. Pour in red wine, scraping up browned bits from the bottom of the pot. Return beef and juices to pot.
  5. Add carrots, garlic, bouquet garni, and water; bring to a boil.
  6. Lower heat to medium-low; cook uncovered for about 2 to 2½ hours until beef is tender, adding water as needed.
  7. Discard bouquet garni, taste for seasoning, garnish with parsley.
