  • 5 strips bacon
  • 3.5 lbs beef chuck
  • 4 tbsp unsalted butter
  • 1 yellow onion
  • 3 large carrots
  • 5 garlic cloves
  • 2 cups Burgundy wine
  • 2 cups beef stock
  • Fresh thyme and bay leaves
  • 16 oz cremini mushrooms
  • Frozen pearl onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a Dutch oven, cook chopped bacon over medium-low heat until browned. Remove and set aside.
  3. Season beef cubes with salt and pepper. Sear in the same pot until browned on all sides. Remove and set aside.
  4. Sauté chopped onions and carrots in remaining fat, then add minced garlic and tomato paste.
  5. Sprinkle flour over the mixture, stir well, then pour in Burgundy wine and beef stock.
  6. Return bacon and beef to pot with thyme and bay leaves. Cover and bake for 2½ hours.
  7. In the last half hour, sauté mushrooms and pearl onions in butter, then add to the pot.
  8. Cook for an additional 45–60 minutes until beef is tender.
