- 5 strips bacon
- 3.5 lbs beef chuck
- 4 tbsp unsalted butter
- 1 yellow onion
- 3 large carrots
- 5 garlic cloves
- 2 cups Burgundy wine
- 2 cups beef stock
- Fresh thyme and bay leaves
- 16 oz cremini mushrooms
- Frozen pearl onions
Instructions
- Preheat your oven to 350°F (175°C).
- In a Dutch oven, cook chopped bacon over medium-low heat until browned. Remove and set aside.
- Season beef cubes with salt and pepper. Sear in the same pot until browned on all sides. Remove and set aside.
- Sauté chopped onions and carrots in remaining fat, then add minced garlic and tomato paste.
- Sprinkle flour over the mixture, stir well, then pour in Burgundy wine and beef stock.
- Return bacon and beef to pot with thyme and bay leaves. Cover and bake for 2½ hours.
- In the last half hour, sauté mushrooms and pearl onions in butter, then add to the pot.
- Cook for an additional 45–60 minutes until beef is tender.
