  • 5 strips bacon
  • 3 1/2 lbs beef chuck
  • 4 tbsp unsalted butter
  • 1 yellow onion
  • 3 large carrots
  • 5 garlic cloves
  • 2 cups Burgundy wine
  • 2 cups beef stock
  • Fresh thyme and bay leaves

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a Dutch oven, render the bacon over medium-low heat until browned. Remove and set aside.
  3. Season beef with salt and pepper, then sear in the same pot over medium-high heat until browned; remove.
  4. Sauté onions and carrots in butter for 2-3 minutes, then add garlic, tomato paste, and flour; cook until darkened.
  5. Deglaze with Burgundy wine, add beef stock and herbs, return beef and bacon to the pot, cover, and bake for about 2½ hours.
  6. In a skillet, sauté mushrooms and pearl onions until browned; stir into the stew and return to the oven for another 45-60 minutes.
  7. Let rest covered for at least 30 minutes before serving.
