Ingredients
- 1 cup uncooked quinoa
- 1 can (15 oz) white beans, rinsed and drained
- ⅓ cup red onion, finely diced
- ½ cucumber, chopped
- ½ cup fresh cilantro
- 1 scallion
- 1–2 cloves garlic
- ¼ cup plant-based yogurt or olive oil
- Juice and zest of two limes
- 1 tbsp maple syrup
Instructions
- Cook quinoa according to package instructions and let it cool.
- Blend cilantro, scallion, garlic, yogurt (or olive oil), lime juice and zest, coriander, vinegar, and maple syrup until smooth.
- In a large bowl, combine cooled quinoa with beans, onion, and cucumber.
- Pour dressing over the mixture; toss until evenly coated.
- Serve immediately or chill in the fridge before serving.
