  • 1 cup raspberries (fresh or frozen – if using frozen berries, make sure they aren't frozen in syrup)
  • 6 tablespoons unsalted butter (softened to room temperature)
  • 1 oz full-fat cream cheese (brick style)
  • 1 and 1/2 to 2 cups powdered sugar
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, whisk together flour, cocoa powder, baking soda, and salt. In another bowl, cream softened butter with brown and white sugars until fluffy. Mix in egg and vanilla.
  3. Gradually combine dry ingredients with wet mixture, then fold in chocolate chips.
  4. Drop cookie dough onto a lined baking sheet and bake for 8 minutes; cool on a wire rack.
  5. For frosting, beat together softened butter, cream cheese, and raspberries until smooth. Gradually add powdered sugar until desired consistency is reached.
