Ingredients
- 1 cup red quinoa
- 2 large sweet potatoes
- 2 poblano peppers
- 1 (15 oz.) can black beans

Instructions
- Rinse quinoa under cold water. In a pot, combine quinoa with vegetable stock, salt, pepper, smoked paprika, and garlic powder. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until liquid is absorbed.
