  • 1 cup red quinoa
  • 2 large sweet potatoes
  • 2 poblano peppers
  • 1 (15 oz.) can black beans
  • Homemade chipotle sauce
  • Olive oil and spices (oregano, paprika, garlic powder)

Instructions

  1. Rinse quinoa under cold water. In a pot, combine quinoa with vegetable stock, salt, pepper, smoked paprika, and garlic powder. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until liquid is absorbed.
  2. Preheat the oven to 425°F (220°C). Toss cubed sweet potatoes with olive oil and spices in a bowl. Spread on a baking sheet and roast for 20-25 minutes until tender.
  3. Sauté chopped poblano peppers in olive oil with spices until softened.
  4. In a mixing bowl or skillet, combine cooked quinoa, roasted sweet potatoes, sautéed peppers, and drained black beans.
  5. Fill charred tortillas with the mixture and top with jalapeños and chipotle sauce before serving.
