  • 1 lb chicken breasts, cut into small pieces
  • 1 cup wild rice
  • 3 cups chicken broth
  • 5 carrots, chopped
  • 5 celery stalks, chopped
  • 1 onion, chopped
  • 10 tbsp butter (divided)
  • 4 tbsp flour
  • 2 cups milk
  • Optional: 3-4 cups cubed bread

Instructions

  1. Preheat your oven to 350°F. In a large baking dish, mix chopped onion, carrots, celery, wild rice, and chicken broth. Cover with foil and bake for 1 hour and 15 minutes.
  2. While the casserole is baking, melt 4 tablespoons of butter in a saucepan over medium heat. Stir in flour, salt, and poultry seasoning; cook for 1 minute. Gradually whisk in milk until smooth.
  3. If using bread topping, melt remaining butter and toss with cubed bread.
  4. After baking time is up, remove foil from the baking dish and stir in raw chicken pieces along with the creamy sauce.
  5. Top with buttered bread cubes (if using) and increase oven temperature to 450°F. Bake uncovered for another 20-30 minutes until chicken is cooked through and bread is golden brown.
  6. Allow to rest before serving; garnish as desired.
