Ingredients
- 1 lb chicken breasts, cut into small pieces
- 1 cup wild rice
- 3 cups chicken broth
- 5 carrots, chopped
- 5 celery stalks, chopped
- 1 onion, chopped
- 10 tbsp butter (divided)
- 4 tbsp flour
- 2 cups milk
- Optional: 3-4 cups cubed bread
Instructions
- Preheat your oven to 350°F. In a large baking dish, mix chopped onion, carrots, celery, wild rice, and chicken broth. Cover with foil and bake for 1 hour and 15 minutes.
- While the casserole is baking, melt 4 tablespoons of butter in a saucepan over medium heat. Stir in flour, salt, and poultry seasoning; cook for 1 minute. Gradually whisk in milk until smooth.
- If using bread topping, melt remaining butter and toss with cubed bread.
- After baking time is up, remove foil from the baking dish and stir in raw chicken pieces along with the creamy sauce.
- Top with buttered bread cubes (if using) and increase oven temperature to 450°F. Bake uncovered for another 20-30 minutes until chicken is cooked through and bread is golden brown.
