- 1 red bell pepper
- 1 green bell pepper
- 1 red onion
- 2 garlic cloves
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tbsp hoisin sauce or honey
- 2 tbsp vegetable oil
- 1 cup jasmine or basmati rice
Instructions
- Cook the rice: Rinse rice under cold water until clear. Bring 2 cups of salted water to a boil, add rice, cover, and simmer for 12–15 minutes. Fluff with a fork after resting.
- Sear the chicken: Heat 1 tablespoon of oil in a wok over medium-high heat. Season chicken with salt and pepper, then stir-fry until browned and cooked through (about 5–7 minutes). Set aside.
- Stir-fry the vegetables: In the same pan, add another tablespoon of oil and sauté minced garlic and sliced onion for 1 minute before adding both bell peppers. Stir-fry for an additional 3–4 minutes until crisp-tender.
- Add sauces: Return chicken to the pan, pour in soy sauce, oyster sauce (if using), hoisin sauce or honey, and cornstarch slurry. Toss to coat well and simmer for another 2–3 minutes until thickened.
- Serve: Plate the stir-fry alongside or on top of steamed rice.
