- 8 oz lo mein noodles
- 3/4 lb boneless skinless chicken breast
- 1 large carrot
- 1 red pepper
- 3 garlic cloves
- 1 Tbsp ginger
- 1/2 cup chicken broth
- 1/4 cup soy sauce
- 3 Tbsp honey
Instructions
- Cook lo mein noodles according to package instructions, rinse under cold water, and set aside.
- Cut chicken into thin strips. Heat oil and butter in a wok over medium-high heat, add chicken with salt and pepper, cook until no longer pink.
- In the same pan, sauté julienned carrots and red peppers until tender. Add minced garlic and ginger; cook until fragrant.
- Mix chicken broth, soy sauce, sriracha (if using), sesame oil, cornstarch, and honey in a bowl.
- Combine cooked chicken with vegetables and noodles in the pan; pour sauce over and toss to coat. Cook until heated through.
