Ingredients
- 1 3/4 lbs boneless skinless chicken breasts
- 1 lb grape tomatoes
- 1 package (8 oz) mozzarella balls
- 3 Tbsp olive oil
- Fresh basil leaves
- Parmesan cheese
- Pine nuts or walnuts
- Garlic clove
- Balsamic glaze
Instructions
- Soak wooden skewers in water for at least one hour to prevent burning.
- Preheat the grill to medium-high heat (425°F).
- Thread chicken pieces and grape tomatoes onto the skewers (4 chicken pieces and 3 tomatoes per skewer).
- Brush with olive oil and season with salt and pepper.
- Grill skewers for 4 to 6 minutes on each side until chicken reaches 165°F internal temperature.
- Meanwhile, prepare pesto by blending basil, parmesan, pine nuts or walnuts, garlic, olive oil, salt, and pepper in a food processor.
- Once cooked, add mozzarella balls to each end of the skewer and drizzle with pesto and balsamic glaze before serving.
