  • 1 lb Brussels sprouts
  • 1.25 lbs sweet potato
  • 1.3 lbs boneless, skinless chicken breasts
  • 3 Tbsp cooking oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tsp steak seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp sweet paprika
  • 1 Tbsp butter

Instructions

  1. Preheat oven to 400°F.
  2. Halve Brussels sprouts; toss with 1 Tbsp oil, salt, and pepper on a parchment-lined baking sheet.
  3. Slice sweet potatoes in half lengthwise; rub with 1 Tbsp oil and place cut-side down on the baking sheet.
  4. Roast veggies for 20 minutes; stir Brussels sprouts then roast for an additional 10-15 minutes until golden brown.
  5. Season chicken breasts with steak seasoning and paprika.
  6. Cook in a skillet over medium-low heat with remaining oil for about 8 minutes per side until fully cooked (165°F internal temperature).
  7. Let chicken rest before slicing; divide into containers with roasted vegetables.
