  • 1/3 cup pure maple syrup
  • 1 large egg yolk, room temperature
  • 1/2 cup canned pumpkin, blotted
  • 2 tsp vanilla extract
  • 1/2 tsp maple extract (optional)
  • 1/2 cup granulated sugar
  • 1/2 tsp pumpkin or chai spice blend

Instructions

  1. Make brown butter by melting unsalted butter in a saucepan until it forms brown bits. Cool for about 30 minutes.
  2. Prepare canned pumpkin by blotting excess moisture with paper towels.
  3. In a bowl, whisk together flour, spice blend, baking soda, and salt.
  4. In another bowl, combine cooled brown butter with light brown sugar and maple syrup until smooth. Mix in egg yolk and pumpkin puree.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Chill the dough for at least 8 hours or overnight.
  7. Preheat oven to 350°F (177°C) and line cookie sheets with parchment paper.
  8. Roll chilled dough into balls, coat in spiced sugar mixture, and place on prepared sheets.
  9. Bake for 12–14 minutes until slightly puffed; cool on racks.
